4 cups chopped kale
1½ cups shredded cooked chicken
1 cup cooked quinoa
¼ cup sliced jarred roasted red peppers
¼ cup Greek salad dressing (see Tip)
Crumbled feta cheese (optional)
¼ cup raw walnuts, chopped

Place kale, chicken, quinoa and roasted peppers in a large bowl. Add dressing and toss to coat. Top with feta, if desired
TIP:
Clean Salad Dressing
2 small garlic cloves , minced.
1/2 teaspoon dijon mustard.
1 teaspoon dried oregano.
3 Tablespoons raw apple cider vinegar.
juice of 1/2 lemon.
1/2 cup olive oil.
3/4 teaspoon salt
1/2 teaspoon black pepper.
